How to read a maker’s spec
A useful equipment note names the field on the manufacturer page, not a star rating. KitchenAid’s speed guide is a spec: dough hook, speed 2, yeast doughs. Nordic Ware’s Naturals page is a spec: uncoated aluminum, even heat, rim. UF/IFAS Dry Heat: Baking, Roasting, and Broiling is a spec: 210°F at the center of a yeast-crusted loaf. This lesson is how to read those pages before you spend.

What counts as a spec
A spec is a claim the maker or an extension service will still stand behind next year: motor placement, bowl volume, hook shape, metal, oven-safe temperature, internal doneness. A colorway is not a spec. A street price is not a spec. User photos of brownies are not a spec. When a lesson cites KitchenAid, Nordic Ware, King Arthur, or UF/IFAS, the cite is the spec.

Pan fields worth copying down

Oven fields from Dry Heat: Baking, Roasting, and Broiling
UF/IFAS Dry Heat: Baking, Roasting, and Broiling tables conventional vs convection: standard time vs shorter time, still air vs fan, evenness vs a fan that can knock down a cake’s rise. Deck ovens in shops add stone mass and top/bottom heat without a home-oven fan; that is a different machine class, described by commercial makers. For a home bench, Dry Heat: Baking, Roasting, and Broiling’s two-row table is the literacy that matters: if you turn the fan on, you have changed the heat path. Confirm with a thermometer.
How to hold two pages
- Open the manufacturer or extension page. Copy the field, not the marketing headline.
- Write the geometry or metal in one column and the job (stiff dough, even cookies, crumb temperature) in the other.
- Check two rows on Compare to keep them on one screen.
- Bake a test: a mixer that walks the counter, a pan that burns the first tray, a loaf that is 180°F in the center. Those are the reviews that count.
